i think depends on the person who came out with the recipe. some measure by weight, some measure by volume. most recipes will measure flour by volume - cups.
recipes in chinese or from chinese usually measure by weight while western will measure by cups.

If you are just starting out in baking or would rather weight, then weight. If you can bake using very good agaration, then go ahead. I had to make do without my weighing scales in Rosebud when I made my brownies. Still good if not better.

For things like sugar, rice, those non-compactable ingredients, I'd rather use the measuring cup if possible.

You'll learn these things along the way.

I see, thank... I think I always compact my flour... so in the end, I use weight scale more accurate :embrass:

Is that mean for Flour should use weight machine even thou the recipe said 2 cup of flour
and for sugar, desicated coconut, chocolate chips, rasins.. use cup...

i think flour is the main ingredient, so by weighing is more accurate.

I would prefer to weigh the flour but as I can eyeball the amount (after 15 years of baking), I can also do without the weighing machine.

Yes. Of course you can also increased the amounts for choc chips, raisins a bit anytime...:D

So much for being named Alex Chim..

i'm very sad as i write this post..
one of my bro's fren (my fren too) committed suicide this morning.
he's a jovial, helpful, friendly & approachable chap.
his leaving would leave a scar in his family and friends' hearts.
i'm in a total state of shock & feeling very, very depressed.
i feel like crying ..

life is very short... let's all be happy...

 Only the good die young
