preparation of chicken
- wash the chicken, pat dry
- i used around 2 tablespoon of hua diao wine to 'bathe' the chicken
- marinate it, then allow it to 'stand' for 20 mins
- steam chicken, chopped it into biteable sizes
preparation of potatoes
- peeled, washed and cut into biteable sizes
- boil until soft
- put one side
cooking
- heat wok, add sesame oil
- add in chicken & ginger slices
- stir fry abit
- add in potatoes
- add in sauce - water, dark soya sauce, oyster sauce, a pinch of sugar, a dash of pepper (sauce), corn flour, mixed
- stir fry until chicken & potatoes fully 'submerged' with the sauce.
add in spring onions if you want then serve . hope i didnt get mixed up any step ;p
