Did some googling as I never heard or tried the "taco" method before. But still, I think I will give it a miss as a tray or paper tank uses lesser chemical which means faster heating or cooling down of chemical.
One problem I face with too little chemical is the temperature swing in the chemical as the heat capacity of the liquid is low. Even though we can start a few degrees lower and end up with a few degrees higher at the end of the development, i find that it is not always reliable as it depends on the time of the day I develop. Development curve is also not linear which gives me a hunch that that too much swing is no good, although I never really did a controlled experiment to prove it. I have swings up to +-4C when I develop in a hot afternoon. Have a bit more chemical can help to tame the temperature swing during development imo.
