黄金咸蛋虾, Golden Salted eggs prawns recipes
Ingredients:
• Prawns, (deveined)
• 4 salted duck egg yolks
• Chili Padi
• 1 stalk of curry leaves
• Garlic, ginger and onion (chopped finely)
• 1 tbsp of butter
Coating for Deep Frying:
• corn flour
• 1 egg
• Bread crumbs
Methods:
• Steam the duck egg yolks. Mash and set aside for use.
• Clean and devein the prawns. Triple coated, dip into corn flour, then egg then Bread crumbs.
• Heat oil for deep fried prawns.
• Dried the excess oil from the deep fried prawns on a paper towel.
• In a heated saucepan, add and melt butter, add garlic, ginger, onion, chili padi and curry leaves till fragrant.
• Stir fry in the mashed salted egg yolks and fry till it turns foamy.
• Add prawns and coated with yolk thoroughly.
