I have enough whetstones at home to fill my dry cabinet (I'm not joking) .

Unfortunately for me, some Japanese whetstones cost as much as a trinity lens.
Next time when you kenna Big Sweep, fly to Japan and shop for all the exquisite whetstones there.i buy that & my head will be on the chopping block!! :hung:

Hi KopiOkaya, have you heard of these Tanegashima knives before? They seem to be quite highly rated and the prices are quite reasonable too.
May I know when are single edged knives preferred over knives with a 50-50 edge?
how is a deba different from a santoku? They look pretty much the same to me.
Yes, I have.
Such knives have a lower blade angle (15 degree or less). Thus, they are much sharper. However, do take note that single bevel knives come in both for left and right handers.
Simple.... Deba is for fish. It has a thicker blade and is heavier. I will show you the differences on Monday when we meet at Razorsharp.
