Cantonesse style steamed Chicken "claypot" rice recipes
Ingredients:
•2 cups of rice
•1 ½ cup water
•chopped shallots, ginger and onion
•2 chicken drumstick, cut into pieces
•½ tbsp oyster sauce
•½ light soy sauce
•½ tsp sesame oil
•½ shao xing wine
•½ tsp pepper
•5 mushrooms soaked
•1 Chinese sausage, cut to pieces
•Small piece of salted fish (~4cm)
•2 tsp cornstarch
Method:
1. Marinate the chicken with chopped shallots, ginger and onion, oyster sauce, light soy sauce, shao xing wine, pepper and cornstarch.
2. Add mushrooms, sausage and salted fish in the chicken marinate, put in the fridge for at least 1 hour.
3. Wash rice and put rice and water in a ceramic bowl/jar
4.Put the jar in a pot filled with water and boil it for abt 8 mins, till it dry a little bit.
5.Add chicken and its marinate on top the rice and continue cooking for 15 mins.
