Most of the vibrant ones are HDRI http://en.wikipedia.org/wiki/High_dynamic_range_imaging
The rest are pretty much the scene itself with some raw adjustments. I guess when taking jpeg format, if given the correct in camera conversion and the right scene, the color will look vibrant enough on its own.
