So I suppose every step change in the shutter or aperture size in F80 is only 1/2 a stop rather then 1 stop.

Depends on how you set it. Dunno about the F80, but the F100 can be set to 1/3 stop increments/decrements as well. :)

Most of the local wedding photographers I know use a combination of 2 35mm SLR bodies with flash for each body pluse a range of lenses from 20-24mm up to 200mm and a medium format rig such as a Bronica with 3 lenses and a large Metz hammer head fleash or a Hassy, Pentax or Rollei 6000 series etc as well as a good assortment of filters, tripod, monopod, light/flash meters and so on.

Usually its enough gear to fill 2 AW Magnum Lowepro shoulder bags. though to be fair the bags are 'dumped' in a corner and only the gear needed for the part of the wedding is used.
