Woah, nice photos Eric! I went to Egypt too last year, but your photos are so much better! I quite paiseh to take pictures of the locals cos after trying a few times (and getting hounded and asked for money after I took a photo of them, I just stopped taking pictures of them...)
Anyway sin, I brought along my 24/2.8, 50/1.8 and 105/2.8. The 24/2.8 got lots of use, as you need it to take the pyramids, temples etc. The 50 saw some use too, especially in the museums, and the 105 the least use of all, though I did use it a bit.
Be warned that there are lots of X-ray machines in Egypt.. at the entrance of most museums and some temples. I bought only low speed film (100, 200) so the X-ray didn't bother me as much and I didn't bother asking for hand inspection.
I didn't bring my tripod over so I don't really know about tripod permits, but I did bring my monopod, which I brought out when I anticipate that the tour visit is going to stretch into the night (yup, was on tour too!), and didn't have any trouble with at the only temple I brought it too.
Do note also that nights are rather chilly (its a desert after all!) so bring a sweater.
