Hehe... don't worry ang bao sure covered one... nobody will 'lao kui' to pack a small ang pow at a posh restaurant. ;p

However, if you want to earn, then consider a few places I like personally:

Mariott
Mandarin
Ritz
Dragon Palace Restaurant (WTC)

Another way is to look for those restaurants that are not within any hotel. Those are easier to book, but one thing is that you'll need to travel back (somewhere) after the dinner has ended unlike those you link up with a hotel.
