are you happy with the out of camera images from your Canon 5D?

Yes, although the colors are different from what you will get from a Fuji. When I first used my 40D, I was disappointed that its pictures looked flat, almost dull (compared to my previous Fuji/Nikon) but I realized that Canon's straight from camera colors are actually much closer to the actual scene being taken and if there are bright colors in the picture, they will be reproduced as such. Otherwise, there is the impression that the pictures lack punch.

As for the 5D, I still say you must match it with quality glass, as it will very quickly reveal the flaws of a lesser lens - in most cases, the full frame sensor out-resolves such lenses.
So if you do not need a full framer, most everybody will be satisfied, and very pleased with a cropped sensor camera.

.... actually the demands placed on the lens by a full frame sensor is not resolution... The 5D has a much lower pixel density than lets say a cropped sensor like olympus 510. A 4/3rds lens on a 510 has to RESOLVE higher resolution than a full frame lens on a 5D. A full frame lens has other requirements though like corner to corner sharpness, etc.
