If you are not sure of the WB setting you want, just shoot in RAW. PP software allows you to tweak the WB in whichever way you want. You will also be able to do very fine WB tuning that the 1000D will not allow. Settings are usually not set for all night scenes. You have to play it by ear most of the time because different locations have different amounts of light and you might want to vary the shutter time to suit the situation. nightscenes also look better at times when shooting 5-15mins after sunset to get more character in the sky with the remaining twilight.

One thing you want to avoid at times is to go for a 50-50 composition, where you place the horizon at the middle of the frame. Especially in 3 and 4 where there is lots of room in the top and bottom of the frame.

For your shot of fullerton and shenton way from esplanade, I think a wider view will better. Cutting off the building on the left is not a good idea. Either leave it out of the frame entirely or bring it into the frame completely.

You might also want to try bulb mode which will enable you to drag exposures beyond 30sec. Doing a much longer exposure will allow you to smooth out the water more. You can also try using ND filters and GND filters.

Another thing to try is to find a different perspective from these locations where you took the pictures. Sometimes thinking outside the box will help you shoot the very overshot location in a very different light and make it really fresh. Your choice in framing and PP will also determine your style. It is good to have your own style of shooting.
