Hi jtsky, I also enjoyed your Carbonara very much, mm mmm mmmm:thumbsup:

Glad to see you have posted another recipe, your secret chilli sauce looks wicked, can't wait to try it. There are a couple of ingredients that I dun know what they are, maybe they go by another name? Calamansi and chichalok? I would ask my wife she is in Spore and I am stuck here in Darwin, she has gone out for the evening and will only be home well after I have hit the sack.
I love chillies and have at least a dozen different varieties growing in my garden and would like to try your sauce.

Have got limes in garden and have seen chinchalok I am sure in Asian supermarket, thank-you raptor1988;)

Thanks, Clunk, Chinchalok adds an unique taste to chilli, it goes well especially with herbal beef/mutton soup (one of the hainanesse cuisine), but it is kind of acquired taste that some really hate it. Try to find out. :)

Thank-you jtsky, I have acquired a taste for most things eg century egg, durian, herbal soups, the only thing that I have not liked is my wife's bitter gourd soup. I am stopping at the Chinese Empourium on the way home from work to see if I can find Chinchalok.

Last time I went Melaka, I bought one from the local, very nice, I wish I buy more. :)

Hello, It's has been awhile since I last post. was busy with my baby. Let's start with something auspicious! :)


Ingredients:
盆菜 (Pen Chai)
•Mushrooms (soaked)
•Dried scallops (soaked)
•Roasted pork
•Roasted duck
•abalone
•Prawns
•Frozen vegetable/sotong balls
•Fish Maw
•Lotus root
•broccoli

Chicken stock
•1 chicken
•金华火 腿 (Jin hua ham)

Method:
Chicken stock
1.Put chicken and金华火 腿 in room temperature water and bring to boil with high fire.
2. Turn to slow fire to boil for 1-2 hours

盆菜 (Pen Chai)
1.Arrange the ingredients like pic in claypot
2. Add in chicken stock and bring to boil and serve :)

hmm, it might.
But I am not totally sure, I usually shoot food without flash and use as much ambiene light as possible.
But i guess if you use a diffuser or bounce the flash, it will definitely not be as harsh.
