If you have more cash to spend. why not get a 18-200? it's a better walkaround lens if u are not happy. can always sell it off later...personally i prefer 18-200 than 18-55 due to it's longer range.
+1 for the EF-S 18-200mm. It'll cover you for pretty much anything you're likely to encounter on your trip. Add a 50mm f/1.8 for portraits/low light/night photography and you're all set. Only drawback is the 18-200 is bigger than the 18-55 kit lens, and heavier too.

The difference in range between the 18-55 and 18-200 is so much, the deciding factor should be if you need the extra range, not the weight.
Don't take it the wrong way, the gear will only be used if you are willing to carry it around, if you feel that the 18-200 is too heavy, then I would really suggest not to buy it.
EF 50mm f/1.8 II is only around $130 ,just got it from John 3:16 and i'm A 500D+18-200mm user...so far the results are ok specially when taking potrait photos with the 50mm , cheap lens but High DOF!

If the weight of 18-200 is not a problem, go for the 18-200 as it will give you the conveinence of a wide range of focal length without the hassle of changing lens. Personally, this give me more photo opportunities compared to the 2 lenses (18-55 + 55-250) combo.
I agreed that you should also get a 50mm F1.8 (F1.4 if you have the budget) as this can be used during low light condition and it is great for portrait. Have fun shopping
