Yes, they will mount, but they may have limited capabilities. AI lenses will not meter iirc, and only AF-S or AF-I lenses will autofocus. AF-D lenses will not autofocus.

Actually the mount is called Nikon F mount and is the same throughout all Nikon models now. It's just the compatibility of the bodies. Yes, the 50mm f1.8D will not AF on a D5100

Depends on which lens because:
1. Fast lenses will ensure a brighter viewfinder so easier to manual focus
2. Certain lenses have better focus rings so easier to manual focus

Focusing screen is an accessory that you can purchase to replace your existing focusing screen. Can Google focusing screen to find out more.
