i think the BEST way to choose is... bring your dad to the shop.
let he hold and play with the cam...
i was having the same problem as u.. D90 or D300...
but after i tried on D300.... i leave D90 alone.
personal preference really.
end of the day it's your dad who is going to use it

While that may be the best approach, it has a tendency to skew the choice to the better camera. 'cos you'll feel the shutter release, the fps, the view finder, etc.
Just as you've experienced, when taking this approach esp if cash is not an issue, the better camera wins. And the weight of the camera won't feature that much in 15 min of playing at the shop. It will after a 1-day hike.
I think it is better to rationalize what you want for your dad and what he wants, then go to the shop. Fine if you want to make the final decision there, but think through first, not go and play first. Guarantee you'll buy D300 if you play first then decide.
The price difference can be used to fund a SB-900, 50mm f/1.8, 60mm f/2.8 micro, etc. You choose a more solid camera with less accessories or a less solid camera with more accessories that may equally be capable for his needs may actually be more fun.
I know deep inside me I wanted a D700 but I can get (some of) SB-800, MB-D10, 60mm f/2.8micro, 105mm f/2.8 micro if I get the D300, and the rest is history.
