center weighted ... spot give me either super bright or super dark.. sigh

i will take photos using M mode and when the exposure is +0, i take.. but 75% of time, i find the pic a little dull / gray dark. Often i need to use adobe photo elements to bring it back to lively colors.. must i aim for +1 instead??? is my settings wrong? needless to say, Av or...

ok... btw how a-f works? i noticed when trying to a-f in scenes with mix of bright lights and dark areas, the a-f fails.. and 12M is too big. 5meg. if i change to 10M ok right? doesnt mean my photo chui hor?
