You don't have to follow the pros in everything they do...anyway, try to choose nice looking ginko nuts.
Btw, Pros apply makeup to the food. Adjust the position of the ginko nuts, wipe away any distracting stuff (lingering fluid?) from the bowl, spray some stuff to make it shiny, add utensils, nicer background (table cloth!).
Also work on your lighting. Shining warm light on yellow food tends to oversaturate the yellows.
