reception area is high ceiling with perspex, will eat up lots of light, and usually reception table are set up in front of the granite wall, so will get hot spot easily if wall is in the background, and one side have glass panel, another side have the two lift doors. and the space are so cramp, photographer won't be able to move around, most of the shots are shot from the same angle.
yes, some part of the ceiling are too low, and inside dinning areas are too high for ceiling bounce, so not easy to get consistent lighting thru out.
and also bear in mind this is restaurant, take table shots have to be very fast, they will just serve the food till it end, don't wait for photographer if the table shots not done. cause everyone want to go home early.

Saw some shots done there and it might not look good due to surroundings. Hence keen to speak to one that has done a AD shot there before.

Refer to Catchlights earlier postm and my reply in #11.
Speak with your potential photographer and discuss how he or she would handle the situation. See if he or she can sketch it out and describe to you how the lighting set-up he or she recommends would affect the scene. Also, see if that photographer is willing to do a recce of the actual location.
I suspect that using only on-camera flash would not get you clear, bright but not glaring flash shots.
Under such conditions, shooting at very high ISO with modern DSLRs that can go very high may also not be the ideal answer, because you're not changing the lighting ratios which looks like a lot of heavy down-lighting.
