If you set the camera to Vivid when you shoot, there is no way to undo it. My recommendation is to shoot in RAW and in sRGB. When you open a RAW file, you will be shown a menu which allows you to choose the colour adjustment value (-5 to +5). More flexible in my opinion. Downside of this, you require a large CF card.
Alternatively, when you are more confident with the colour setting, eg: always set it to colour +2 suits your taste, then fix it in the camera and start to shoot in JPEG. Save time in conversion and save CF space.
