You don't really have to wait around to take a picture like that. A circular polarizer could easily replicate the saturation/sky gradient, and a few tweaks in Photoshop will get you the color.

One suggestion is to take pictures in both landscape and portrait views. That way you mix it up a little, and can make your overall album more interesting. But definitely keep at it. There's an old photography quote that says your first 10,000 photos are your worst.
